When preparing pulled pork it is similar to pot roasting, the slower you cook it and the lower the heat the better it will turn out. I highly recommend using a pork butt for pulled pork, this slow cooking method will allow this cut to really show off with tenderness, flavor and juiciness. Pork butt is the equivalent of a chuck cut in pork. This means a little more fat but also a lot more flavor. Allow one half pound of boneless meat per person when sizing your roast. Fresh pork shoulder can also be used for those that are looking for a leaner solution but it has more waste in bone and skin and will not be as moist.
