Whether grilling or broiling, steaks will be juicier and hold their flavor better if they are cut a little thicker.  A thicker cut steak will have less of a chance of being over cooked.  If your steak of choice is a steak with a little more fat and grain you can slice them as thin as ¾ – 1 inch.  The leaner steaks should be cut at least 1 inch thick.
